Classic stuffed peppers are surprisingly easy and satisfying. They’re packed with flavour and perfect for a family dinner.
Ingredients:
• ½ C white rice, uncooked
• 2 Tbsp olive oil
• 1 medium onion, chopped
• 3 cloves garlic, finely chopped
• 2 Tbsp tomato paste
• 500g beef mince
• 1 can diced tomatoes
• 1 ½ tsp dried oregano
• Salt and pepper to taste
• 6 large capsicums, tops and cores removed
• 1 C cheese of choice
Instructions:
1. Preheat oven to 200 degrees.
2. In a large pot, cook the onion until softened. Stir in garlic and tomato paste and cook until fragrant. Add mince, breaking it up as it cooks.
3. Stir in rice, diced tomatoes, oregano, salt and pepper. Let simmer, stirring occasionally, until rice is cooked and liquid has reduced.
4. Place capsicums in a baking dish and drizzle with oil. Spoon the beef mix evenly into each capsicum. Top with cheese, then cover with foil.
5. Bake until capsicums are tender, about 30 minutes. Uncover and continue baking until the cheese is golden.
6. Serve hot and enjoy!
